HIX@ThePenn debuts this Valentine’s Day

Mark Hix, the celebrated chef, restaurateur and food writer founded the HIX Academy in partnership with Weymouth College in 2014. His vision; to provide a unique opportunity to combine catering and hospitality qualifications while discovering the next generation of fine young chefs, restaurant staff and bartenders. The latest venture for the students, who work and study daily in the HIX Academy restaurant at the college, will be to pack up all they have learnt so far and bring it as a pop up concept to Pennsylvania Castle on Portland. We are delighted to debut HIX@ThePenn on Saturday 14th February with a very special lunch menu designed for us by Mark Hix himself HIX@ThePenn Menu - Feb 16 Guests will be welcomed into the Castle Library for arrival drinks, before lunch is served in the Castle Dining Room in typical HIX fashion, focusing on seasonal British food with fresh produce from British suppliers, and then enjoy tea of coffee in the Castle Drawing Room. The afternoon will keep the exclusive feel of The Penn, with limited bookings only taken in advance. Everything on the menu, from the reception drinks right down to the HIX Academy truffles, has been created by Mark himself so guests will be sure of a real treat Mark Hix thinks it’s a great opportunity for the students: “the HIX Academy is all about giving talented local students the opportunity to go out and work with selected local employers, to develop key industry specific skills and have the real-life experiences needed to grow to become our next generation of exciting and creative chefs.
